Organic Quinoa (Keen-wa) called ‘the mother grain’ by the Incas, it is packed with protein, calcium, and much more to boost energy. The best Quinoa grows high up on South American mountains. Also nicknamed, ‘nature’s perfect food,’ Quinoa has an abundance of protein and significantly greater amounts of nutrients than wheat. One source suggested mixing Quinoa with P Gold, 1 part to 4, to make bread with complete protein! Use it as a rice substitute, as hot cereal, in desserts, etc. A light colored, tiny grain, cook quinoa like rice or mill up for powerful flour. Cooking instructions: Cook Quinoa 2 parts water to 1 part grain for about 20 minutes. Since it is bland like millet & amaranth, use part fruit juice or some broth as the liquids for flavor.  Holli used cooked Quinoa for Quiche Crust! 2/3 C quinoa in 1 1/3 C water. Add parmesan cheese & pat into a pie plate. Bake about 10 minutes, and then add your favorite quiche filling. Bake as usual.
